The United Kingdom finally gained its first geographically protected honey in 2025, when Welsh Heather Honey received PGI status. It is a fitting choice: late-summer ling heather creates a reddish to dark-amber honey whose unusual protein structure makes it naturally gel-like and notoriously difficult to extract. Wales is only part of the story. In Scotland, commercial beekeepers move hundreds of colonies onto Highland heather moors, while British genetic research has found some Scottish colonies with strong similarity to the historically native European dark honeybee. Britain's managed bee population today is far more mixed after generations of imported bees, however. Honey authenticity has become another major national issue: the UK's Food Standards Agency is actively developing improved analytical methods because domestic production supplies only a small portion of demand and large volumes of honey are imported. The British honey story is therefore becoming one of moorland terroir, native-bee conservation, provenance and proof.
