Ukraine's honey map is being formally defined at the same time that war is making beekeeping extraordinarily difficult. In July 2024, Zakarpattia Honey became a registered Ukrainian geographical indication, protecting mountain and foothill honeys from the southwestern Carpathians. In September 2025, it was joined by Frumushika Steppe Honey from the Tarutynskyi Steppe in Bessarabia—an ecosystem containing more than 650 vascular plant species. Those two GIs could hardly be more different: bilberry, mountain raspberry and fireweed in the Carpathians versus acacia, viper's bugloss and sainfoin in southern steppe. At the same time, a 2026 humanitarian overview estimates that the war, drought, winter mortality, land mines and disrupted logistics have sharply reduced Ukrainian beekeeping capacity. Yet family apiaries continue producing honey across Polissia, the Buh steppe, Odesa, Zakarpattia and other landscapes. Ukraine's honey story today is simultaneously about terroir, survival and rebuilding.
