Slovakia has a beautiful honey split between lowland blossom country and mountain forest honey. Acacia is one of the best-known monoflorals, while forest honeydew and wild raspberry honeys become more important as the landscape rises into wooded country. The strongest regional find is Bardejovský med / Med z Bardejova, an EU Protected Designation of Origin honey from northeastern Slovakia whose defining form is dark fir-tree honeydew honey. Its specification is unusually strict about moisture, conductivity and mineral content. Family producers add another theme HC likes: traceability. MIJA near Nitra now offers honey tied to a specific apiary location, season and batch, with laboratory reports available for individual lots. Slovakia's bees are predominantly associated with the Carniolan honeybee, but modern breeding means genetic purity should not be assumed from geography alone. Taken together, Slovakia gives Atlas a useful contrast: pale acacia from warmer lowlands versus dark forest honey formed in mountain fir country.
