Moldova is showing us in real time how weather can rewrite a honey harvest. In 2025, spring frost and rain devastated the acacia crop and badly reduced linden production; the head of Moldova's national beekeeper association described acacia as almost absent. By August 2026, acacia honey was back on the market, though the first wholesale offers were lower than beekeepers had hoped. Geography matters here. Northern Soroca is known for acacia honey, Călărași and Anenii Noi for sunflower, while the forested Codrii are associated with complex multifloral honey. Moldova is also heavily export-oriented: processors such as Apifera collect honey from beekeepers across the country and send much of it abroad. Underneath that commercial system are thousands of small apiaries and family traditions. Moldova therefore gives HC both a terroir map and a living climate-change timeline.
