Greece may be one of Europe's most complicated and rewarding honey countries. Dry mountains, pine forests, islands and aromatic Mediterranean plants create honeys that often look and taste nothing like pale blossom honey. Greece has three PDO honeys in this research batch, each with a different biological route to the jar: Meli Elatis Menalou Vanilia from fir-associated honeydew around Mount Mainalo, Pefkothymaromelo Kritis from a natural combination of thyme nectar and pine honeydew on Crete, and Meli Kissouri from autumn heather in southern Evia. Greece's bees are equally complicated: historic regional bee populations have been blurred by decades of colony movement and imported genetics.
