France is practically a honey continent. More than 63,000 beekeepers manage roughly 1.8 million production hives, while lavender country, chestnut forests, mountains, sunflower fields, linden, acacia and forest honeydew all contribute to the national harvest. France also has a remarkable protected-origin honey map: Corsica and Vosges fir honey carry AOP status, while Alsace, Provence, the Cévennes and Picardy have geographically protected honey traditions. Corsica is especially valuable to Honey Chronicles because its protected identity combines island flora, seasonal harvests and a distinct Corsican honeybee population. In the Vosges, almost-black fir honey begins not with flower nectar but with honeydew.
