Czechia
Czechia's honey story is built less around a few giant producers and more around a dense culture of smaller beekeepers. One Czech study analyzed 5,987 honey samples from hobby beekeepers over nine years, all submitted for testing connected with the Český med quality standard. Czech honeys span blossom and honeydew sources, with linden, heather, forest honey, rapeseed, fruit blossom and black locust appearing in research and producer portfolios. The bees themselves carry a complicated history: the European dark bee once dominated the area, while Carniolan bees were introduced from the south roughly two centuries ago. Modern genetic work finds substantial regional structure rather than one uniform national bee population.
