Israel's honey industry is unusually regulated around limited nectar-forage resources and hive-placement permits. A 2024 Knesset market analysis counted about 529 licensed beekeepers and roughly 124,000 permitted hives, with honey production spread among more than 100 producers. The strongest Atlas lesson is migratory provenance: producers may move hives among desert, agricultural and Mediterranean landscapes, so a Producer's home address must never become Honey origin by default. The Levantine honey bee Apis mellifera syriaca is historically native to the region, while modern managed stocks include introduced commercial lineages.
